Vegan Dinner Recipe: Nosages and hash browns.



You know how sometimes you think that a lazy fry up is just the ticket for a quiet night in? Well, this is that fry up. It's super quick (provided you've done a wee bit of prep earlier) and it's FRIED, so that is a bonus. And I like to serve it with steamed veggies so it takes on the vibe of a well rounded meal.

Alternatively, scrap the veggies, fry up some onion and mushroom, roast some tomatoes in rock salt, and serve this meal up as a massive vegan breakfast.

So versatile!



This meal serves two.

Ingredients:

Half a packet of vegan sausages (there are some great ones out there, test for your favourites!)

A couple of slices of facon.

One cup of potato, grated (these potatoes don't NEED to be cooked, but I find them too starchy if they aren't parboiled. So I boil a couple of whole potatoes for ten minutes, until they're a bit cooked, but not soft of soggy, then I cool them in the fridge for a couple of hours before using them. That's what I mean about the prep)

Ingredients:
One cup of sweet potato, grated (no need to parboil)
A shallot/small onion, chopped very fine
The equivalent of two eggs
A quarter of a teaspoon of baking powder
A teaspoon of salt
Two tablespoons of flour
Grapeseed oil

Instructions:
Mix up the egg equivalent, baking powder, salt, and flour in a bowl.







Add the onion. Stir.





Add the grated potato and sweet potato.



Mix everything thoroughly.






Heat a non stick pan up to medium and add a generous amount of oil.

Form the mix into four patties. I like to dip them, and my hands, in flour.
It's messy, but it prevents sticking on the pan (even on non-stick, these are difficult little suckers to keep unstuck).

Once the oil is heated, drop the hash browns in the oil thusly.





Cook for four to five minutes on either side, until they're crispy (like, you know, hash browns.) These babies are much thicker and more like rosti than like a sad little fast food hashbrown.

Now fry up whatever else you want with your fry up. I went with these:





And I steamed some veggies. And then we ate it and it was amazing. And now I have to edit an essay. Sad face. But there was left over panacotta, so happy face.
